Strawberry Mousse

This recipe is particularly good if you have a dry mouth or throat, sore mouth or difficulty swallowing. Be sure to blend all ingredients to a smooth consistency. You can also make this dairy-free by substituting coconut cream for dairy cream.

Prep time: 10 minutes + soaking & chilling time

  • 85g fresh strawberries
  • ½ cup coconut cream or dairy cream
  • ¼ cup raw cashew nuts, soaked in warm water for 20 minutes and drained, optional
  • 1 teaspoon ground chia, optional
  • Blend the strawberries in a food processor until smooth. You can put the mixture through a sieve to remove the seeds for a really smooth consistency.
  • Wash the bowl and blend the cashews if using.
  • With a hand or stand mixer, whip the cream until stiff peaks form.
  • Add the cashew cream (if using) to the strawberries and stir to combine. Sprinkle in the ground chia if using and stir to combine.
  • Add the strawberry mixture to the cream and fold through. Serve in a cold glass.
