No Fuss Salmon Patties

Salmon Patties are an easy meal to make but we have a no fuss and no chopping alternative. These are also high in protein which is essential for maintaining
muscle mass while going through cancer treatment. Enjoy!

Makes: 8 patties

Prep time: 15 minutes

Cook time: 10 - 15 minutes

Ingredients:

  • 2 cups frozen or fresh cubed sweet potato or pumpkin or combination
  • 2 x 130g tins skinless & boneless salmon
  • 1 egg
  • ¼ cup pre-chopped spring onion
  • 3 - 4 teaspoons ground flaxseed
  • Sprinkle of seasoning of choice, I used Mingle Herb & Garlic Seasoning

Method

  • Cook pumpkin & sweet potato in the microwave until tender. Place into a food processor with a non-cutting blade or mash with a potato masher.
  • Add all remaining ingredients to the the pumpkin mash and stir until combined.
  • Measure out ¼ of mixture and roll into a ball. Repeat with the remaining mixture. Cook in a pan or the oven until heated through. Serve hot.
  • Topping: For extra flavour and moisture, make a topping with ½ cup plain Greek yoghurt, a squeeze of lemon juice and some fresh dill and parsley.

For Dry Mouth & Throat: Use some plain Greek yoghurt to add extra moisture
For taste changes (bland taste): Consider using extra herbs to add more flavour.

Method

  • Place all the teriyaki sauce ingredients into a bowl and stir until the sugar has dissolved.
  • Place the salmon in the same bowl and and turn to thoroughly coat. Cover and place in the fridge to marinate no less than 20 minutes and no more than 2 hours.
  • Place a non-stick frying pan over a medium heat and add the salmon fillets skin side down. Keep the remaining marinade in the bowl. Cook for a few minutes and then add the remaining marinade over the fish. 
  • Turn the salmon and continue cooking until done to your liking. Brush the salmon with the marinade in the pan throughout the cooking process.
  • Serve on homemade fried rice.

Homemade Fried Rice

  • Cook rice according to packet instructions. 
  • In a non-stick pan, heat the sesame oil and add the remaining ingredients. Cook stirring until the vegetables have softened. Add the rice and stir to combine.
