Fig & Honey Chia Pudding

Chia pudding suits so many side effects. Below is listed a couple of adaptations for loss of weight and dry mouth & throat. Enjoy!

Serves: 2-3

Prep time: 15 minutes + 2-4 hours chilling time

Ingredients:

  • 1 cup milk of your choice
  • 4 tablespoons chia seeds
  • 1 teaspoon vanilla extract, optional
  • ½ cup coconut, vanilla or plain Greek yoghurt
  • 2 tablespoons Manuka honey
  • 2 fresh figs

Method

  • Place milk, chia seeds and vanilla extract into a jar with a lid. Stir and place in the fridge. Leave for 10 minutes, stir again and return to the fridge for2- 4 hours or overnight.
  • Once the chia is ready, remove from the fridge and divide between two jars for serving. Mix the honey with the yoghurt and spoon into the jars. Top with fresh figs.

For Loss of Weight: Use full fat milk or coconut milk. Use full fat yoghurt.
For Dry Mouth or Difficulty Swallowing: Stir through extra Greek yoghurt or coconut yoghurt before serving for more moisture.

Method

  • Place all the teriyaki sauce ingredients into a bowl and stir until the sugar has dissolved.
  • Place the salmon in the same bowl and and turn to thoroughly coat. Cover and place in the fridge to marinate no less than 20 minutes and no more than 2 hours.
  • Place a non-stick frying pan over a medium heat and add the salmon fillets skin side down. Keep the remaining marinade in the bowl. Cook for a few minutes and then add the remaining marinade over the fish. 
  • Turn the salmon and continue cooking until done to your liking. Brush the salmon with the marinade in the pan throughout the cooking process.
  • Serve on homemade fried rice.

Homemade Fried Rice

  • Cook rice according to packet instructions. 
  • In a non-stick pan, heat the sesame oil and add the remaining ingredients. Cook stirring until the vegetables have softened. Add the rice and stir to combine.
