Christmas Spiced Panna Cotta

Christmas Spice Panna Cotta is a fantastic alternative to heavy and fruity Christmas cake and plum pudding. Being a cold dessert, it may suit the side effects of nausea and metallic taste.

Makes: 4 small puddings

Prep time: 10 minutes + 2 hours to overnight chilling time

Ingredients:

  • 150 ml double cream
  • 150 ml milk
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon Christmas Spice mix (see note)
  • 4 gelatine leaves

Method

  • Soften gelatine leaves according to packet instructions.
  • Place remaining ingredients into a small saucepan and heat gently until steam begins to rise. Don’t let it boil :)
  • Add the softened gelatine leaves to the warmed cream mixture and stir gently until fully dissolved.
  • Remove from the heat and pour into moulds or glasses. Place in the fridge for at least two hours or overnight to set. Enjoy as is or top with fruit or chia jam. 

Note: Christmas Spice mix recipes can be found on the internet. They are generally a mixture of cinnamon, coriander, ginger, clove, and nutmeg. The exact qualities will vary according to individual taste. I used Gewertzhaus Christmas Cake & Pudding Spice in this recipe.

Method

  • Place all the teriyaki sauce ingredients into a bowl and stir until the sugar has dissolved.
  • Place the salmon in the same bowl and and turn to thoroughly coat. Cover and place in the fridge to marinate no less than 20 minutes and no more than 2 hours.
  • Place a non-stick frying pan over a medium heat and add the salmon fillets skin side down. Keep the remaining marinade in the bowl. Cook for a few minutes and then add the remaining marinade over the fish. 
  • Turn the salmon and continue cooking until done to your liking. Brush the salmon with the marinade in the pan throughout the cooking process.
  • Serve on homemade fried rice.

Homemade Fried Rice

  • Cook rice according to packet instructions. 
  • In a non-stick pan, heat the sesame oil and add the remaining ingredients. Cook stirring until the vegetables have softened. Add the rice and stir to combine.
