Chicken Suit Soup

We have a chicken soup recipe which can be made in multiple ways and versions and is adaptable to a number of treatment side-effects. It is low effort for lack of energy, can be adapted for nausea, and modified for sore mouth and difficulty swallowing.

Makes: 6-8 serves

Prep & cook time: 45 minutes

  • 2 small chicken breasts or 300g shredded chicken (you can use ½ bbq chicken)
  • 1 litre chicken stock
  • ⅓ cup frozen corn kernels
  • 4 cubes Bell Farms frozen kale or 1 cup fresh kale
  • ⅓ cup frozen edamame 
  • 1 cup fresh or frozen broccoli
  • Squeeze of ginger paste or grated ginger to taste
  • Fresh or dried herbs (I used parsley)
  • ½ teaspoon sea salt - optional
  • Cook and shred the chicken breast if using or shred the bbq chicken meat.
  • Add all ingredients to a medium saucepan and bring to the boil. Turn down to a simmer and cook until the soup is heated.
  • Serve as is or modify according to side-effects - see below.

For sore mouth & difficulty swallowing: Pour the cooked soup (be sure it has cooled first) into a blender and blend until smooth.
For nausea: Strain and separate the soup solids from the broth. Eat the broth only while still experiencing nausea. Portion up and freeze the solids so you can add back into the broth when you are up to eating something more substantial.
