ANZAC Biscuit Flavoured Energy Balls 

This recipe is tastes adapting food and flavours to a whole new level. Simple to make and retains that ANZAC biscuit flavour we know and love.

Makes: approx. 6 balls

Prep time: 15 minutes

Ingredients:

  • ½ cup quick oats
  • 2 tablespoons golden syrup
  • 2 tablespoons almond spread
  • A splash of water if required

Method

  • Add all ingredients to a food processor bowl, use a non-cutting blade if you have one but it is not necessary if you don’t. Pulse until all the ingredients have combined and have formed a large ball. If you don’t have a food processor, mix all ingredients with a wooden spoon until combined.
  • Roll small amounts of mixture into balls between the palms of your hands. Store in an airtight container in the fridge or freezer until required.

For sore mouth, difficulty swallowing, dry mouth & throat: Take two energy balls and place into a blender with 250mL of any milk. Blend until smooth and enjoy as a drink.

For salty taste changes: Use an unsalted nut butter.

Method

  • Place all the teriyaki sauce ingredients into a bowl and stir until the sugar has dissolved.
  • Place the salmon in the same bowl and and turn to thoroughly coat. Cover and place in the fridge to marinate no less than 20 minutes and no more than 2 hours.
  • Place a non-stick frying pan over a medium heat and add the salmon fillets skin side down. Keep the remaining marinade in the bowl. Cook for a few minutes and then add the remaining marinade over the fish. 
  • Turn the salmon and continue cooking until done to your liking. Brush the salmon with the marinade in the pan throughout the cooking process.
  • Serve on homemade fried rice.

Homemade Fried Rice

  • Cook rice according to packet instructions. 
  • In a non-stick pan, heat the sesame oil and add the remaining ingredients. Cook stirring until the vegetables have softened. Add the rice and stir to combine.
